Peperonata - english / deutsch / italiano


In today's post something a little bit different
As it's another dull, grey day here in Milan, I wanted to bring some color into it, so decided to make a 'peperonata' of red and yellow sweet peppers. I don't add green ones, because cooked they easily taste bitter. Here's my recipe ... for people who like garlic. Can be left out, but tastes much better with it ;-)


Heute ein etwas anderer Post, um Farbe in den grauen Tag hier in Mailand zu bringen. Ich habe eine 'Peperonata' aus rotem und gelbem Paprika zubereitet (keine grünen, die werden leicht bitter), und möchte euch mein persönliches Rezept dazu weitergeben - eher für einem Tag, an dem man nicht vorhat, viel unter die Leute zu gehen ;-)


Ovviamente non mi metto a insegnarvi come si fa la peperonata, ma visto che ho scoperto che ognuna lo fa in modo diverso, qui il mio (consigliato solo per sabato sera se la Domenica non si esce......)






Ingredients per person as main course

1 red and 1yellow pepper
1 small yellow onion (or more, if you like)
1 piece of garlic
some capers
some olives without stone
salt
2 tablespoons of olive oil (I use to prepare it beforehand with dried spices of all kinds, it's only important that herbs are really dry, no red pepper powder and caution with garlic, it might go moldy)

It's difficult to put more than two peppers in one pan, so if you make it for more than one person you should prepare it separately and take it from the fire one minute earlier, then put it all together to finish




Zutaten pro Person als Hauptgericht

1 roter und ein gelber Paprika
1 kleine gelbe Zwiebel (oder nach Geschmack natürlich auch mehr)
1 Knoblauchzehe
einige Kapern
einige entkernte Oliven
Salz
2 Esslöffel Olivenöl (ich habe immer halbe eine Flasche mit getrockneten Kräutern drinnen bereit, je nach Geschmack mit Thymian, Oregano, Majoran, Rosmarin, Wacholderbeeren........der Fantasie sind hier keine Grenzen gesetzt. Vorausgesetzt sie waren wirklich schön trocken, sonst schimmelt's leicht. Deshalb auch die halbe Flasche, eine ganze nur bei starkem Verbrauch. Ich gebe auch ein paar geschnittene Knoblauchzehen mit dazu, aber auch die werden leicht schlecht)

Mehr als zwei Paprika passen nicht in eine Pfanne, deshalb bei mehreren Personen die einzelnen Portionen vorbereiten, eine Minute vor dem gar werden vom Feuer nehmen und zum Schluss zusammengeben und fertig kochen/braten




Ingredienti per 1 porzione abbondante

1 peperone rosso, 1 giallo
1 cipolla dorata piccola
1 spicco di aglio
capperi
olive senza nocciolo
sale
2 cucchiai da tavola di olio d'oliva (meglio se preparato con le erbe)

Più di due peperoni non ci stanno in una pentola, perciò tocca fare porzioni separate cotte un'attimo in meno, per poi unirli per riscaldarli







Wash the peppers, rid them of the seeds, dry them well and cut into big pieces. Heat the oil in a nonstick pan, add the peppers and  slightly brown them on both sides (attention, burns easily). Add pieces of onion, capers, half olives, smashed garlic and salt and fry for one more minute. Cover and cook for 10 minutes with low temperature. Control how much liquid there is in the pan - if there's none, go on for another 5/10 min.,  if there is, remove the cover and go on cooking until it is reduced.

Can be used cold as well, as appetizer





Die Paprika waschen, putzen und in grosse Stücke schneiden und gut abtrocknen, in einer Pfanne mit Antihaftbeschichtung im heissen Öl auf beiden Seiten kurz anbraten, bis sie ganz leicht braun sind (mittlere Stufe, nicht zu hoch, brennen sehr leicht an). Die grob geschnittene Zwiebel, Kapern, halbierten Oliven und die zerdrückte Knoblauchzehe daruntermischen und noch eine Minute weiter braten.  Zudecken und auf schwacher bis mittlerer Stufe ca. 10 Minuten dünsten.
Danach je nachdem ob sie viel Wasser gelassen haben mit oder ohne Deckel so lange weiter auf dem Feuer lassen, bis die Flüssigkeit verkocht ist.

Eignet sich natürlich auch als Beilage, und kalt als Vorspeise




Lavare i peperoni, togliere i semi, asciugarli e  tagliare in pezzi grossi. Scaldare a fuoco medio l'olio in una pentola antiaderente, mettere i peperoni e farli dorare da tutti e due i lati  (attenzione che si bruciano facilmente). Aggiungere la cipolla tagliato in pezzi grossi, i capperi, mezze olive, l'aglio schiacciato e il sale e far rosolare ancora un minuto. Abbassare il fuoco, coprire e cuocere per 10 minuti. Se c'e tanto liquido, togliere il coperchio, se no lasciarlo su, e cuocere per altri 5/10 min.







I'm curious if someone succeeds in preparing the dish according to my recipe. On holidays I always buy cook-books, only to discover that I'm not able to work with instructions in other than my native language......


So, in deutsch sollte ich die Anleitung eigentlich hingebracht haben - hoffe ich wenigstens :)


Sarei curiosa se qualcuno riesce a preparare questa ricetta secondo le mie istruzioni. Compro sempre i libri di cucina ovunque vado, ma poi preparo anche le cose italiane secondo i miei libri in tedesco perché non capisco mai niente in atre lingue. Meglio che non vi invito a cena........

  17. Danke für dieses tolle Rezept, absolut nach meinem Geschmack, vor allem, weil Kapern dabei sind, und die liebe ich! Sehr gut auch die Erklärung Deines speziellen Olivenöls, gefällt mir, das muss ich in dieser Form auf jeden Fall ausprobieren. Und leckerer kann man einen Tag gar nicht bunt machen, als mit so einem Rezept!
